Blueberry Oatmeal Muffins


These muffins are delicious any time of day!  Only 127 calories and you wouldn't think they were lightened up.  Think blueberry, brown sugar, baked oatmeal in the form of a muffin.  Very moist and perfect to grab and go if you're in a rush of a morning.  I have been a follower of Skinnytaste for a while now and this recipe is just another to add to my favourites.  I hope you enjoy these sweet treats as much as I do!

Blueberry Oatmeal Muffins


  • 1 1/2 cups quick oats
  • 1 cup unsweetened almond milk (or skim milk)
  • 1/2 cup brown sugar, packed
  • 2 tbsp honey
  • 1/2 cup unsweetened applesauce
  • 2 egg whites
  • 1 tbsp oil
  • 1 tsp vanilla extract
  • 1/2 cup white whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup fresh blueberries
  • baking spray


  1. Preheat oven to 400°F or 200°C
  2. Line a muffin tin with liners and lightly spray with oil.
  3. Soak oats in milk for about 30 minutes.
  4. In a medium bowl combine brown sugar, honey, apple sauce, vanilla, egg whites, oil and mix well.
  5. In a third bowl combine whole wheat flour, salt, baking powder, baking soda and whisk to combine.
  6. Combine oats and milk with sugar, applesauce mixture and mix well.
  7. Slowly add in the dry ingredients and mix until just incorporated. Fold in blueberries.
  8. Spoon into the muffin tin and bake for 22-24 minutes.
